Crock Pot Chicken

We are definitely a family on the go. When you add work, school, and volunteering, blogging and then driving up to Canada on weekends, we barely have time to go grocery shopping let alone cook a warm meal each night.

So I leave a lot of the cooking to my personal chef. Oh you don’t have one? That’s a shame. 😉

C.P. is wonderful, all you have to do is provide the ingredients and when you get home you have a warm, home cooked meal, waiting for you.  Okay, I let C.P take it from here. Hehehehe – sometimes I find myself very amusing. 😉

Here is another fast and fabulous meal so grab your crock pot and let’s get cookin!

Step 1: Layer some dry stuffing mix on the bottom of the crock pot.

Step 2: Roughly chop up an onion (or two) and layer it on top of the stuffing mix.

Step 3: Rince and pat dry your chicken. As you can tell, I went for the chicken thighs that were on sale (99 cents/pound….dazzel me baby!)

Layer your chicken on top of the onions and sprinkle with seasoning. You can add your own special blend. Here I just used dome steak seasoning I had in the cupboard and it worked great.

Step 4: Layer some onions on top and cover.

I set this on low and let it cook all day while I was at work. When I got home, I was greated by a delish aroma that made my mouth water. This is what it looked like….look at all those juices.

I ended up draining the juices into a container and used for chicken stock in a soup. Then I ‘fluffed’ up the stuffing with a fork and dug in.

Chocolate Banana Bites

My little man has a sweet tooth like his mama; although he LOVES apples, pineapple and any other kind of fruit you put in front of him, some nights he longs for a little chocolate.  Since he was such a good boy all night, I searched through my pantry to see what I could whip up for desert. 

This is what I came up with:

This is super easy to make and you can even add some peanut butter to the mix if you have some in stock, but I kept it simple.

Step 1: Use a tablespoon of Nutella and melt it down. I just popped mine into the microwave for a couple of seconds. Remember, a little goes a long way so you won’t need much more than that.

Step 2: Slice up the banana. (see I told you this is easy peasy 😉 )

Step 3: Here you have a couple of options, put a small dollop of Nutella on each slice of banana, or make mini Nutella and banana sandwiches…

OR use a fork or tooth picks and simply dip the banana slices into the melted Nutella.

Since the banana slices were a little slippery my little man opted for the last method. Overall, I believe he gave this a big ol’ thumbs up and I didn’t feel too guilty about giving it to him.

Every time I see Nutella, I think of my older sister Scina who always had it on hand whenever we went over to her house. Great memories. 😀

Quick DIY Project

Hi Gang, hope your having a great week. Before I get to the hump day funnies, I had to share this quick and super easy DIY art project I made last night. Well, actually JBear made it and I framed it but you get the point. 😉

And voila! Isn’t is pretty. I love the colours my little Picasso chose and now all that is left is to hang this baby on the wall.
